Zucchini, sweet potato and sesame patties

Ingredients


Ingredients for the patties


Grated zucchini (1 whole zucchini)

Half an onion, finely chopped or grated

1 tablespoon sesame seeds

1 egg (or 2 small ones depending on the texture)

1 tablespoon nutritional yeast

1 tablespoon grated parmesan

1 tablespoon flour (or corn flour for a gluten-free option)

Roasted sweet potatoes, diced (pre-cooked in the oven)

Salt, pepper

Pinch of cayenne

Olive oil


Ingredients for the sesame sauce


1 tablespoon tamari

1 teaspoon honey

1 teaspoon toasted sesame oil

1 teaspoon sesame butter (tahini)

1 tablespoon mayonnaise

1 teaspoon apple cider vinegar

Sambal oelek (optional, to taste)



Preparation


Preparing the patties


Grate a whole zucchini and finely chop or grate half an onion. Place them in a large bowl. Add 1 tablespoon of sesame seeds, 1 egg, 1 tablespoon of nutritional yeast, 1 tablespoon of grated parmesan, and 1 tablespoon of flour. Mix in the roasted sweet potato cubes (cut into 1 cm cubes and baked in the oven with a drizzle of olive oil at 375 °F for 15–20 minutes, until lightly golden).


Season with salt, pepper, and a pinch of cayenne. If the mixture is too dry, add another egg (either two small eggs or one large egg, depending on what you have). Mix well until you have a homogeneous dough.


On a baking sheet lined with parchment paper, drop a heaping spoonful of the mixture and flatten slightly to form small patties. Make sure to space the patties apart to avoid them touching. Drizzle a little olive oil on each patty to help them crisp up.


Bake at 375 °F for about 15 minutes, or until the patties are golden brown. For extra crispiness, extend the cooking time slightly. Once cooked, remove from the oven and let them cool slightly before serving.


Preparing the sauce


In a bowl, combine 1 tablespoon tamari, 1 teaspoon honey, 1 teaspoon toasted sesame oil, 1 teaspoon sesame butter, 1 tablespoon mayonnaise, and 1 teaspoon apple cider vinegar. Whisk until smooth and well blended.


For a spicier flavor, add a touch of sambal oelek, or leave the sauce plain, depending on your preference.
