Sesame Mandarin grilled tofu steak

Ingredients (serves 2)


1 block of organic extra-firm tofu

2 tablespoons tamari (or soy sauce)

2 fresh garlic cloves, grated or finely chopped

1 tablespoon ginger, grated or finely chopped

Zest of 1 mandarin

1 tablespoon honey or maple syrup

1 teaspoon toasted sesame oil

1 tablespoon apple cider vinegar (or rice vinegar)

1 tablespoon sesame butter

Juice of 2 mandarins (or oranges)

1 tablespoon avocado oil

1 tablespoon raw sesame seeds

150 g mixed mushrooms (shiitake, oyster, or others)

½ onion, thinly sliced

Salt and pepper, to taste




Preparation


Cut the block of organic extra-firm tofu in half horizontally to create two flat rectangles. Using a knife, make shallow cross-hatch incisions on the surface of each piece, being careful not to cut all the way through. This will help the marinade penetrate and create a crispier texture when cooked.


Place the tofu pieces in an airtight container.


In a bowl, prepare the marinade by mixing the tamari, garlic, ginger, mandarin zest, honey, sesame oil, vinegar, and sesame butter. Whisk until smooth and well combined. Pour the marinade over the tofu, ensuring both pieces are fully coated. Cover and refrigerate for 3 to 4 hours (or up to 8 hours for a more intense flavor).


Preheat your oven to 400 °F (200 °C).


Meanwhile, prepare the mushrooms. Heat one tablespoon of avocado oil in a skillet. Add the sliced onion and sauté until it starts to caramelize. Add the mushrooms and cook until golden and slightly crispy. Season with salt and pepper, and stir in a small amount of garlic at the end of cooking to avoid burning it. Remove from the skillet and set aside.


Take the tofu out of the marinade and place it on a lightly oiled baking sheet. Sprinkle the sesame seeds over the top and drizzle with a little oil. Bake for about 30 minutes, or until the tofu is golden and crispy.


While the tofu is baking, pour the leftover marinade into the same skillet used for the mushrooms. Add the juice of two mandarins (or oranges) and cook over medium heat, stirring continuously, until the sauce thickens and becomes silky. Remove from heat once it reaches the desired consistency.


To serve, place a tofu steak on a plate or in a bowl. Top with the mushrooms and drizzle generously with the warm sauce. Serve with jasmine rice, a salad, grilled vegetables, or any side dish you like.
